Honeydew melons have a thick yellow skin and pale flesh. To make melon balls, cut the melon in half crosswise and scrape out the seeds, then use a melon baller. Once prepared the cut melon can be stored in an airtight container in the fridge and should be consumed within 3 days. Honeydew melon can be cut into slices and sprinkled with a little ground cinnamon or ginger for a simple starter or dessert. Ripe melons shouldn’t need any extra sweetening but you could use lemon or lime juice to bring out their natural sweetness if necessary. Mint, ginger, pear, cucumber, cured ham, strawberries and raspberries each taste good with melon. They also make good sorbet and ice cream.
