Product Description While not a traditional component of European cuisine, Okra has been gracing the tables of Caribbean, African, Asian and American households for centuries. Okra is absolutely packed with vitamin C, antioxidants and fibre, and is a great source of calcium and potassium. We recommend making a traditional okra and tomato stew, which is enjoyed throughout Asia, Africa and the Caribbean. Add chopped onions, and two chopped cloves of garlic to a frying pan over a medium-high heat with vegetable oil. Cook for around 3 minutes. Add a pinch of cayenne pepper, a teaspoon of ground cumin, a teaspoon of ground turmeric, and a teaspoon of chili powder and cook for another 2 minutes. Add 450g of chopped okra and cook for 2 minutes then add 2 chopped fresh tomatoes. Cook for a further minute until the juice from the tomatoes begins to release, and then add half a cup of water. Cover and stir occasionally for 5 minutes Serve with basmati rice. Ingredients Okra 100%
