Almazaras de la Subbética is more than just a family business: it is a company of 4000 families who live off and for the olive groves. They are located within the rugged and mountainous terrain of the Sierras Subbéticas national park, in the south of the Province of Córdoba, Due to the unique micro climate characterised by high rainfall and large temperature variations, the legendary olive trees develop into their singular shapes, standing majestically in a landscape that has remained unchanged through the passage of time. The Picudo and Hojiblanco olive groves are resistant to pests, frost and drought, adapted to limy soil and grow on slopes with as much as a 70% gradient and an altitude of between 700 and 1000 metres above sea level. Its adaptation to its rustic setting and the wisdom accumulated over many years (the olive trees have existed for hundreds and, in some cases, thousands of years) have provided the ideal conditions to produce the finest olives possible. Generation after generation of olive growers have passed on their expertise but, more than that, they have conveyed their passion for this land and these groves, which have become an intrinsic part of their life. Aroma/bouquet: Very intense green fruitiness. Many subtleties, demonstrating its great complexity. Traces of fruit and citrus. Herbal flavours: thyme and mint. Hints of vegetables like tomato plant. Flavour/taste: A sweet attack with a moderate palate of bitter, spicy, green almonds. A perfectly structured oil with a long, persistent finish that is sure to delight the taster. Suggestions for use: This fragrant oil is best when paired with heavier meals that are rich in flavour. Drizzle over toast, mixed salads, tomatoes, meat and oily fish.
