Made in the south west of France by La Belle Chaurienne, this is a decadent combination of confit duck (duck legs that have been slowly cooked in duck fat) and Sarladaise potatoes. Sarladaise potatoes are generally made from three simple ingredients: potatoes, garlic and fat, but in this recipe La Belle Chaurienne also adds bacon lardons for even more flavour. Cook in a pan, with the duck skin on the bottom for twenty minutes, gently stirring the potatoes regularly. Allow the confit duck legs to rest for five minutes before serving.
