There was a time when a vast sea of Holm oaks stretched beyond the horizon. Its bronze fruit fed a stock of animals unique in the world: the 100% Iberico pig. Today it is those same ancient Holm oaks that continue to feed our 100% Iberico pigs in a unique ecosystem: the pasture of Valle de los Pedroches. These two factors, purebred and a privileged environment, have been the keys to creating one of the most exquisite delicacies of our land, a symbol of quality and tradition, Ibericos COVAP.
