Sumikama Cutlery is a traditional Japanese manufacturer based in Seki, capital of the Japanese cutting industry. The character in the logo means as much as masterful craftsmanship (Takumi). The blades are made of Japanese VG10 steel - with cobalt and higher carbon content. The damask pattern is created by repeated folding and forging of the high-quality steel in several layers (33 layers + middle layer = 67). After forging, the blades are reheated to about 800 °C, then quickly cooled again and hardened to about 59-60 °C Rockwell. With very good sharpness, it allows a very long service life of the cutting edge (edge retention - does not become dull so quickly), but also allows easy resharpening. The handle is made of duroplastic linen hard resin, which is particularly durable and resistant due to pressure and heat. The knives of the Masterpiece series are comfortable and secure in the hand. The beauty of the blade, along with the matt shiny handle, makes this knife so unique. Kasumi Sumikama, the creator of the Masterpiece series: we also would like you to understand that there are many processes to be worked by hands, and some delicate parts can not be finished like computer draws. These kind of knives are more like hand made rather than machine work for mass production. Kasumi MP are beautiful and extremely sharp, they are perfect for any type of preparation in the fine kitchen. Please wash by hand and do not wash with the dishwasher. As it is a very high quality and hard cutting knife, it is not suitable for chopping bones, cartilage or frozen.
