Freshly harvested young and tender bamboo shoots, Ushoi are thinly sliced with much care after peeling off the hard sheaths. They are then well-treated with water, sunbathed, and readied for use. You can prepare various ethnic dishes with it including Eromba, Ooti, and Kangsu. Ushoi is an integral healthy food item in the Northeast India thanks to its high content of protein, amino acids, minerals, fibre, carbohydrates, and low fat.
