Product description Our products are made at our fermentary at a community farm on Tyneside. This is a 'bundle' of 9 of our products using the NON-VEGAN versions of our kimchis: It contains 3 x kimchis, 3 x Krauts & 3x Pickles: KIMCHI: The Korean classic, flavour packed, with a crunchy texture, spicy & sour with an addictive umami hit. WHITE KIMCHI: ‘Baek Kimchi’ is a low spice/heat kimchi variety that is mild and refreshing, RADISH CUBE KIMCHIi: An authentic Korean side dish/addition to a meal, full of kimchi flavour, with a subtle sweetness and satisfying crunchy texture! Our CLASSIC KRAUT (sauerkraut) has a gently sour and mildly salty vegetal flavour and crunchy texture. As it is mild in flavour, it is very versatile. YELLOW KRAUT (sauerkraut) has a fruity sunshine twist, sweet and sour, with the earthy flavour & bright colour of fresh turmeric and ginger. PURPLE KRAUT (sauerkraut) has a bright sweet and sour, earthy, gently gingery flavour and crunchy texture. Our FERMENTED DILL PICKLES are lacto fermented with fresh dill, dill seeds and more. after several weeks fermenting, we add a light pickling juice to bring a zesty freshness. The LACTO FERMENTED ONIONS are fermented with salt and spices for several weeks and also finished with a light pickle juice to lift and freshen them. PICKLED MOULI is daikon radish cubes, pickled in sweet, sour, and mildly salty brine, it has very refreshing flavour and provides a colourful crunchy twist. The lovely pink colour comes from hibiscus flowers being infused into the pickling liquor. It’s popular in Korea and is eaten with fried chicken, hence: “chicken mou” (n.b no chickens were used in its manufacture!). CLASSIC KRAUT: White cabbage, carrot, salt. YELLOW KRAUT: white cabbage, pineapple, fresh ginger, fresh turmeric, dried turmeric, sea salt. PURPLE KRAUT: purple cabbage, mouli, green apple, ginger, sea salt PICKLED MOULI: Mouli, hibiscus flower, homemade plum vinegar, cider vinegar, water, sugar, sea salt and spice.
