The leaves of the fenugreek plant are wholly different from the seeds. It's less sweet with a more astringent, celery flavor and a mild bitterness. Fenugreek almost functions as parsley does: to provide balance. Fenugreek leaves are a staple in Indian cooking. Often added to egg and bean dishes, it also helps create a solid backbone of flavor for meat rubs and stews.
