Tempering (Crystallisation Curve) Heating: 45-50°C (113-122°F) Cooling: 28-29°C (82.4-84.2°F) Working temperature: 31-32°C (87.8-89.6°F) How to Melt this Chocolate in the Microwave This is an ideal method for tempering a small amount of chocolate. Step 1: Place a small quantity of chocolate buttons into a plastic or glass bowl and heat in a microwave at 800-1000 W Step 2: Remove from the microwave every 15 to 20 seconds and stir well to melt evenly and prevent burning Step 3: Repeat Step 2 until the buttons are nearly melted Step 4: Take the bowl out of the microwave and continue stirring until the mixture is smooth and slightly thicker.
